How We Evaluate
We are a United States buying guide for home and small-scale cheesemakers. Three rules run everything here:
1. The cheese chooses the culture
We match cultures to cheeses using the temperature logic of the make (mesophilic under about 102°F, thermophilic above it), the adjuncts the style genuinely requires, and manufacturer and university-extension references. When a famous cheese needs no culture — halloumi — we say so and sell you nothing.
2. Figures come from named sources
Doses are the retailer's or manufacturer's stated rates for the named product; pH and temperature targets come from manufacturer sheets, retailer guides and university extension material. Where sources disagree, we show the range. Where we could not verify a figure, we do not publish a number.
3. Prices are checked and dated
Every price on this site carries its check date. Pack sizes differ between retailers — a Flora Danica price means nothing without its pack — so we show the pack alongside the price and never compare prices across different pack sizes as if they were the same product.
Some links are affiliate links and may earn us a commission at no extra cost to you. It never changes which culture we recommend for a cheese.
