The Finder follows two rules: filter first by the hottest temperature the curd will reach (over ~102°F means thermophilic), then add the adjunct the style demands — white mould for bloomy rinds, roqueforti plus piercing for blues, B. linens plus washing for washed rinds, propionic plus a warm room for swiss eyes.
