Our take

The thermophilic workhorse: a Streptococcus thermophilus acidifier built for high-cook cheeses. If you make mozzarella or grating cheeses regularly, TA 61 in bulk beats packets on cost per gallon by a wide margin — pair it with LH 100 when you want deeper Italian flavour.
