Our take
The blue mould itself. Strain choice is the flavour decision: PV grows fast and strong for punchy blues, PA/PS run milder. Remember the mould needs oxygen inside the cheese — piercing the wheel is not optional. Start with the LyoPro pack at home scale; the Danisco foils are farmstead sizes.

Doses are the retailer's or manufacturer's stated figures for this product. Culture strength is measured in activity units (DCU/CXU), not weight alone — a teaspoon of one brand is not a teaspoon of another. When in doubt, follow the packet.
Best for these cheeses
- Roquefort-style blue
- Gorgonzola
- Stilton-style blue
- Danish blue
Good to know
- Adjunct only — start with a mesophilic culture first
- Pierce the cheese so the blue can breathe and vein
- LyoPro PR is the home-budget entry; Danisco strains are the connoisseur choice
