Cheese Culture for Feta
Feta is where home and commercial cultures split: home packs are mesophilic, while commercial feta cultures (MT1, Feta A) are actually mesophilic + thermophilic blends that acidify fast. Either path works at home. What makes feta feta is the brine it lives in afterwards.

The make, in short
Home recipes ripen around 85–90°F; commercial feta cultures are meso-thermo blends. Brine is the ageing: store in brine from 2 weeks to months.
The one pitfall
Storing feta out of brine. It dries, moulds and sours wrong — feta lives in its brine.
