Cheese Culture for Parmesan / Grana Style
Parmesan is the thermophilic showcase: TA 61 acidifies at cook temperatures that would kill a mesophile, and LH 100's helveticus does the long flavour work in the wheel. This is a bulk-culture cheese — packets get expensive across a year of makes.

The make, in short
Cooked hot — around 118–131°F in commercial practice — which is why only thermophiles survive. A long commitment: 10 months minimum, 18–24+ for grating depth.
The one pitfall
Substituting a mesophilic culture because the milk starts cool. The cook decides the culture, not the start.
