Our take
The clean, classic mesophilic: two Lactococcus strains, fast clean acid, no eyes and no buttery diacetyl note. That is exactly what cheddar wants. Per gallon inoculated, a 50 DCU foil like this costs a fraction of single-use packets — this is the pack serious home and farmstead makers standardize on.

Doses are the retailer's or manufacturer's stated figures for this product. Culture strength is measured in activity units (DCU/CXU), not weight alone — a teaspoon of one brand is not a teaspoon of another. When in doubt, follow the packet.
